I need a good low fat veggie soup recipe, that is not the cabbage one?

I love soups and I don’t eat meat or chicken, and everytime I look up veggie soups I get this cabbage soup one..I need something different.

    Need to lose weight?

    Chop up any veggies you like and simmer them for an hour or so on low in veggie stock and a little Mrs Dash. I like carrots, zucchini, and onion. I also add some orzo about 10 minutes before I serve the soup. The amount of veggies you add will determine how thick your soup is. You can make it any consistency you want. A little nonfat plain yogurt stirred in at the end will make it creamy.

    Want to lose weight?

    I’ve given you a link below to some vegetable soups although some of them have beef or chicken in them…just ignore those. The website is Nestle’s that owns Carnation so the cream soups use evaporated milk…you can substitute regular milk if you want.

    Another thought is Potato or Baked Potato Soup. My recipes are elsewhere right now, but any that call for ham or bacon will be fine without the meat.

    really any veggie soup you make is low cal,,,, if it is broth based it is not fattening,,,,

    How To Lose Weight Free 60 page Book

    JEN’S LOW FAT CHEESY VEGETABLE SOUP

    2 cups broccoli florets
    2 cups cauliflower florets
    4 cups cubed potatoes
    1 cup diced carrots
    1/2 onion diced
    4 Cans fat free chicken broth
    1 jar Low Fat Cheese Whiz
    1/2 tsp. minced garlic
    Salt and pepper to taste

    Boil potatoes, onions and carrots in chicken broth until almost fork tender. If needed, add enough water to cover vegetables. Add cauliflower and broccoli. Cook until all veggies are tender. Puree 1 cup of potatoes to thicken and add back to soup. Add jar of Cheese Whiz. Stir until blended.

    OR

    LOW FAT VEGETABLE SOUP

    1 or 2 lb. pkg. carrots
    1 pkg. turnips
    1 pkg. parsnips
    2 med. sized rutabagas
    1 lg. onion
    2 c. celery
    1 or 2 cans stewed tomatoes (or fresh)
    Soup beef base

    Peel and dice vegetables. Add water to cover them. Add soup beef base according to directions on package. Bring to a boil and boil gently until vegetables are tender. Large quantity. Freezes well.

    OR

    LOW-FAT ZUCCHINI/BROCCOLI CREAM OF
    VEGETABLE SOUP

    1 med. onion, chopped finely
    1 tsp. minced garlic
    Finely chopped vegetables: 3-4 med. zucchini or 1 big bunch broccoli
    6 c. water or stock
    1/2 c. oatmeal or rolled oats
    2 tbsp. parsley
    1 tsp. curry (optional)
    Salt and pepper to taste

    Saute onion and garlic together (add a little water if needed) until transparent. Add zucchini or broccoli and saute for 2-3 more minutes. Add water, oatmeal and seasonings stirring constantly. Bring to a boil, reduce heat and simmer 15-20 minutes.

    Potato, carrots.zucchini,pumpkin,onion and garlic. Boil them in some veggie stock until tender. Add salt, pepper and mixed herbs. Blend to make a thick creamy soup. If you like it spicy, substitute the mixed herbs for 1 tbs of curry powder.

    Losing weight without starving yourself

    Vegetable Soup
    2 T butter or oil
    1/2 onion
    Lots of water
    Any kind of vegies you want diced or chopped
    Seasonings

    In a big pot, saute the onions in the butter or oil till brown. Add water to halfway fill the pot. Add salt and pepper to taste. Boil for about 10 minutes. Add your vegies and more water to fill the pot. You can also add a little rice, barley, noodles or potatoes if you want. Add some parsley, basil, sage or whatever spices you like. Cook over medium for about 20 minutes or until the vegies are tender.. If the soup is not thick enough, add some cornstarch and water, or flour and water to thicken it up and cook a few minutes longer. Cool and eat!
